Happy Friday everyone! Hope you all have weekend plans that involve coffee and carbs. I am headed into a work-filled weekend. But I have Monday off so it’s a trade off. I am starting to get into a grove at my new(ish) job. Being out of school for the summer helps. Late spring was crazy busy and it’s taken me weeks and weeks to actually feel like myself again. Grateful for a new season of life, just took time to realize that. Have a great weekend!

Waffles adapted from How to Cook Everything 

2 1/2 cup wholewheat pastry flour

1 1/2 teaspoons baking soda

1/2 teaspoon kosher salt

2 tablespoons sugar

1/4 cup butter, melted

2 eggs, separated

1 3/4 cup whole milk

1 teaspoon vanilla

Whisk the dry ingredients together. In another bowl mix the milk, butter, egg yolk, and vanilla . In the mixer beat the egg whites until soft peeks form. Mix the wet into the dry ingredients.  Fold in the egg whites into the batter. Cook on a greased waffle iron.

For bacon and tomato waffles with chive butter:

Waffle recipe above

4 slices of bacon, cut in half

2 tomatos. but into 4ths

olive oil

1/2 cup soft butter

3 tablespoons chopped chives

pepper

Waffles:

Cook the waffles as normal, but right before you close the iron. add 2, 1/2 pieces of bacon right on top. Cook as normal, the cooking time may increase a little.

Tomatoes:

Heat a cast iron skillet with a little olive oil. Sear the tomatoes on each side until dark brown on the edges.

Chive butter:

Cream the butter, chives, and pepper together in a small bowl.

For the Seared Plum Waffles, with Honey Lemon Butter

Waffle recipe

3 plums cut into 4ths

a little sugar

1/2 cup butter + more for pan

2 tablespoons honey

juice from 1/2 lemon

For the plums:

Heat a cast iron skillet with a little butter. Dip each side of the plumbs into sugar. Sear until golden on brown on each side.

For the honey lemon butter:

Cream the butter, honey, and lemon juice together in a small bowl.
