poached salmon with lime cucumber salsa

4 salmon filets

3 sprigs fresh dill

1 large english cucumbers

1/2 onion, chopped

2 limes

olive oil

salt

pepper

Place enough water to cover the salmon in a pot, add a few slices onion, a sprig of dill, juice of 1 lime, salt, pepper, and a splash of olive oil.  Bring to a gentle simmer. Place the salmon into the simmering liquid, and simmer just until cooked, about 7 minutes. Serve with lime cucumber salsa.

Make the salsa:

Peel, and seed the cucumber, cut into small cubes. Mince 2 of the dill sprigs, and toss together with the cucumber in a bowl, add the onion and season with the juice of 1 lime, salt, pepper, and olive oil.
