I don’t post many salads, if you’ve been reading here a while, you know that. Normally I feel that salads aren’t deserving of a recipe. But this I need to share with you. It gives a wink to the gloomy time of year, but is shinning on the possibilities of the coming seasons. It’s light and refreshing, something that is hard to come by these January days.
Makes enough for 2 large dinner plate servings:
For the avacado dressing:
1 tablespoon good extra virgin olive oil
juice from 1/2 lemon
a swirl of honey
salt and fresh cracked pepper
Mash the avocado in a small mixing bowl, add the rest of the ingredient and whisk with a fork. The mixture should resemble runny guacamole. Adjust spices to taste (This recipe will probably need to be adjusted, but taste and add more of whatever you think it needs, more lemon? More olive oil? Add it!)
2 romaine heurts, washed and toren
2 oranges, peeled with a knife, and cut into circles
1 grapefruit, peeled with a knife and sectioned out
a sprinkle of chia seeds
Place the lettuce in a large mixing bowl, add the dressing. Toss to combine. Divide between two plates. Arrange the oranges on the top, sprinkle with chia seeds. Finally, finish with the grapefruit sections.
